Chicken With Dumplings - cooking recipe
Ingredients

2 1/2 to 3 1/2 lb. chicken
1 1/2 c. flour
1 tsp. salt
1/4 tsp. baking powder
1/4 c. liquid shortening
2 1/3 c. milk
pepper to taste
2 c. chicken broth
Preparation

Place chicken in large kettle with water to cover, season with salt and pepper.
Simmer until tender.
Remove chicken from bone. Place chicken broth and 2 cups of the milk into kettle and bring to simmer.
Sift together flour, salt and baking powder.
Combine liquid shortening and 1/3 cup milk.
Add liquids to flour mixture and mix well.
Place dough between waxed paper and roll to 1/8-inch thick.
Cut in 1 1/2-inch squares.
Drop into kettle of simmering chicken, broth and milk.
Cover and simmer 40 minutes.
Add salt and pepper to taste to liquid.
Good dumplings need pepper.
