Apricot Coconut Balls - cooking recipe

Ingredients
    1 c. dried apricots
    1 c. coconut
    3/4 c. chopped nuts
    1 tsp. grated lemon rind
    1 Tbsp. lemon juice
    1 Tbsp. orange juice
    confectioners sugar
Preparation
    Heat apricots in
    top
    of
    double
    boiler
    over boiling water for 10 minutes.
    Put
    apricots, coconut and nuts through grinder using a fine
    blade.
    Knead
    ground mixture with lemon rind, lemon and
    orange juice.
    Add enough confectioners sugar to make a firm mixture.
    Form
    into
    small
    balls
    and roll in confectioners sugar.
    Allow to
    dry at room temperature for at least 4 hours. Makes about 1 pound.
