Ingredients

4 large firm cantaloupes (about 4 lb. each)
1/2 c. coarse salt
2 qt. water
2 Tbsp. whole allspice
1 Tbsp. whole cloves
5 (4-inch) sticks cinnamon
5 c. sugar
2 c. white vinegar (5% acidity)
2 c. water
Preparation

Peel and seed cantaloupes; cut into 1 1/2 x 1/2 x 1/2-inch pieces to make 1 gallon.
Dissolve salt in 2 quarts water.
Add cantaloupe; let stand 2 hours.
Drain and rinse cantaloupe; set aside.
