Ingredients

1 1/4 c. sifted all-purpose flour
3 tsp. baking powder
2 Tbsp. sugar
1/2 tsp. salt
1 beaten egg
1 c. milk
2 Tbsp. oil
1/2 tsp. vanilla
Preparation

Sift together flour, baking powder, sugar and salt.
Combine egg, milk, salad oil and vanilla.
Add to dry ingredients, stirring just until flour is moistened.
Batter will be lumpy. Bake on hot griddle.
Griddle is hot when a drop of water propped on it dances.
Use 1/4 cup batter per pancake.
Makes about 10 (3 to 4-inch) pancakes.
