Fried Rice - cooking recipe

Ingredients
    1 c. long grained rice
    1 onion, finely chopped
    1 carrot, diagonally sliced thin
    1 potato, skinned and diced
    1 beet root, skinned and diced
    1 c. frozen peas
    1/2 c. butter or vegetable oil
    1/2 c. cilantro, chopped
    1 small jar prepared tomato sauce
    1 c. shredded Cheddar cheese
    salt and pepper to taste
    black olives (to top)
    jalapenos (optional)
Preparation
    Fry rice with 1/2 cup butter
    for
    1 minute.
    Add 1 2/3 cups salted, boiling water to
    this.
    When
    the
    whole
    thing starts to simmer vigorously, reduce heat to minimum; cover and cook until done (15 to 20 minutes).
