Suf Soof (Tabouleh) - cooking recipe

Ingredients
    1 c. bulgur wheat
    2 c. parsley, fresh
    2 c. spearmint, fresh
    12 green onions
    5 tomatoes
    1/3 c. oil
    1/4 c. lemon juice
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. cinnamon
Preparation
    Wash bulgur and soak in water to cover for 1/2 hour.
    Mince parsley, spearmint and onions.
    Chop tomatoes finely.
    Mix well. Drain bulgur and squeeze dry with hands.
    Add to vegetables. Combine oil, lemon juice, salt, pepper and cinnamon.
    Mix into salad.
