Ecuador Cariucho(Creamed Potatoes) - cooking recipe

Ingredients
    6 pared potatoes
    1 tsp. fat
    1/2 c. chopped onion
    1 c. light cream
    2 tsp. peanut butter
    3/4 tsp. salt
    yellow food coloring
    1 boiled egg, chopped
Preparation
    Boil potatoes until tender.
    Melt fat in saucepan and saute onions.
    Add cream, bring to a boil and simmer 10 minutes.
    Add peanut butter, salt and a few drops of food coloring while stirring.
    Pour over cooked, drained potatoes; garnish with chopped egg.
    Serve with chicken or roast and lettuce salad. Serves 4.
