Cornish Hens And Rice - cooking recipe

Ingredients
    1 c. long grain rice
    1 envelope Italian salad dressing mix
    2 1/2 c. boiling water
    1 can cream of mushroom soup
    2 frozen Cornish hens, thawed
    salt and pepper
Preparation
    Preheat oven to 350\u00b0.
    Spread rice in 3-quart shallow baking dish.
    Bake for 15 minutes or until golden brown, stirring occasionally.
    Combine salad dressing mix with 2 1/2 cups boiling water and soup.
    Stir into rice.
    Cut hens in half; season with salt and pepper.
    Place cut side down on rice.
    Cover tightly with foil.
    Bake for 30 minutes or until hens are tender.
    Yields 2 to 4 servings.
