Sweet Potato Casserole - cooking recipe
Ingredients

6 large sweet potatoes
6 Tbsp. plus 1/2 c. brown sugar
2 eggs
1/4 c. orange juice
5 Tbsp. unsalted butter
1 tsp. vanilla
1/2 tsp. salt
3/4 c. chopped pecans
Preparation

Heat oven to 375\u00b0.
Bake sweet potatoes until very tender, about 1 hour and 20 minutes.
Remove and let cool.
Reduce heat to 350\u00b0.
When potatoes are cool enough to handle, cut in half, scoop out flesh and mash until smooth.
Stir in 6 tablespoons of the brown sugar, lightly beaten eggs, orange juice, 2 tablespoons melted unsalted butter, salt and vanilla.
Spoon into casserole dish.
