Filet Steaks With Mushrooms And Wine Sauce - cooking recipe

Ingredients
    1/2 lb. fresh mushrooms, quartered
    2 Tbsp. butter
    1 Tbsp.oil
    2 Tbsp. minced onion
    1/4 tsp. salt
    pinch of pepper
    2 Tbsp. butter
    6 Filet Mignon, cut 1 inch thick, wrapped in bacon
    1 Tbsp. oil
    2 Tbsp. minced parsley
    1/2 c. beef stock
    1 Tbsp. tomato paste
    1/4 c. red wine
    1/2 Tbsp. cornstarch
Preparation
    Saute
    mushrooms
    in hot butter and oil for 5 minutes to brown lightly.
    Stir
    in onions and cook slowly for 2 minutes. Season and
    set
    aside.
    Place other oil and butter in skillet and set over moderately high heat.\tAfter butter foam subsides, brown steaks
    for
    3
    to\t4 minutes on each side.
    Immediately remove from heat.\tDiscard bacon.\tSeason with salt and pepper. Place
    on warm platter.
    Pour fat from skillet.
    Stir in stock and tomato paste.
    Boil rapidly until liquid is reduced to 2 to 3 tablespoons.
    Add
    wine
    and
    cornstarch
    and parsley.
    Boil rapidly
    for
    a
    minute to evaporate alcohol and thicken sauce. Add
    mushrooms
    and
    simmer
    for
    1
    minute.
    Spread
    sauce and mushrooms over steak and serve.
    Yield: 6 servings.
