Roast - cooking recipe

Ingredients
    beef roast
    1 pkg. dry onion soup
    salt and pepper
    flour
Preparation
    Salt, pepper and flour all sides of roast.
    On top of stove, brown roast on all sides in about 2 tablespoons of oil in heavy pot.
    (I use Club Aluminum roaster.)
    Sprinkle dry onion soup mix on top of meat.
    Add 1 1/2 to 2 cups water.
    Cover.
    It will steam and moisten soup mix.
    Bake, covered, at 425\u00b0 for about an hour. Uncover and let all the water bake out until bottom of pot is brown (almost burned).
    Add water and continue baking until roast is done.
    Remove from pot and slice. Replace slices in pot.
    Add water to have juice for meat to absorb.
    Bake, covered, for 15 to 20 minutes more.
