Chicken Piccata - cooking recipe
Ingredients

4 chicken cutlets
2 Tbsp. flour
1 to 2 Tbsp. oil
1/4 c. chicken broth
2 Tbsp. butter
1 Tbsp. lemon juice
1 Tbsp. parsley
Preparation

Coat chicken with flour; shake to remove excess.
In large skillet heat oil and cook chicken cutlets, browning both sides. Remove to plate.
Add broth, butter and lemon juice to skillet. Cook, stirring mixture to a boil.
Return cutlets.
Cover and cook about 2 minutes, basting once with pan juices until cooked through. Before serving, sprinkle with parsley.
