Escalloped Carrots - cooking recipe

Ingredients
    1 lb. carrots, scraped and sliced
    1 tsp. salt
    1 small onion, chopped
    1 small pepper, chopped
    buttered cracker crumbs
Preparation
    Cook
    carrots,\tsalt,
    onion
    and
    green
    pepper
    until carrots
    are tender.
    Drain.
    Make 2 cups light white sauce (1 tablespoon\tflour
    for
    1
    cup
    liquid).
    (I
    save liquid from carrots
    to
    make
    sauce and finish with milk to make 2 cups.) Add 1\tcup Cheddar cheese (may be omitted); mix with carrots. Put in greased baking dish.
    Top with buttered cracker crumbs. Bake, uncovered,\tin 350\u00b0 oven for 25 to 30 minutes.
    Makes 6 to 8 servings.
