Chow Chow - cooking recipe

Ingredients
    2 qt. finely chopped cabbage
    1 qt. peeled and chopped green tomatoes
    6 medium onions, chopped
    4 green peppers, coarsely chopped
    2 red peppers, coarsely chopped
    2 1/2 c. sugar
    1/4 c. pickling salt
    6 c. 5% vinegar, divided
    2 Tbsp. prepared mustard
    1 1/2 tsp. ground turmeric
    1 tsp. mixed pickling spices
    1 Tbsp. ground ginger
Preparation
    Combine vegetables and salt; stir well.
    Cover and let stand for 8 hours.
    Drain well.
