Creamed Spinach - cooking recipe
Ingredients

2 to 3 Tbsp. finely chopped salt pork
1 small onion, finely chopped
2 pkg. frozen chopped spinach, squeezed
2 Tbsp. butter
2 Tbsp. flour
3/4 c. milk
1/2 c. whipping cream
1/2 tsp. salt
fresh ground pepper
Preparation

Cook salt pork, covered, over medium heat until fat is rendered (6 minutes).
Add onion.
Cook until brown, stirring often.
Stir in spinach until well blended.
Keep warm.
Heat butter until melted; add flour.
Cook 2 minutes, stirring slowly.
Add milk and cream slowly.
Heat to a boil, stirring constantly, until thickened.
Add seasoning and spinach.
Stir well.
Heat through. Can make the day before covered airtight.
Gently reheat on stove top or microwave.
