Albondigas(Meatballs - Spain) - cooking recipe

Ingredients
    1 lb. ground lean beef
    1/2 lb. chorizo
    1 tsp. salt
    dash ground nutmeg
    1 Tbsp. minced parsley
    2 slices bread, soaked in water
    2 eggs
    3 Tbsp. olive oil
    sherry
    beef bouillon, 4 cubes + 1 can
Preparation
    Combine meat, salt, nutmeg and parsley.
    Squeeze water from bread, add bread and egg to meat mixture and work to a paste. Form into small balls and saute in olive oil.
    Serve hot this way or keep warm in sauce made of equal parts of sherry and gelatined beef bouillon.
