Potato And Kale Soup - cooking recipe

Ingredients
    1 Tbsp. margarine
    1 large onion, chopped
    1 clove garlic, minced
    5 c. vegetable stock
    2 large potatoes, peeled and cubed (about 1 lb. total)
    1/4 tsp. red pepper flakes
    1 large bunch kale, trimmed, rinsed and chopped
    1/2 tsp. salt or to taste
    1/4 tsp. freshly ground black pepper
Preparation
    In a large saucepan, heat margarine over medium heat.
    Add onion and garlic and saute for about 5 minutes, or until softened. Add stock, potatoes and red pepper flakes and simmer, covered, for about 20 minutes, or until the potatoes are tender.
    Transfer half the potatoes and 1 cup cooking liquid to a blender or food processor and blend until smooth.
    Return to saucepan.
    Meanwhile, steam kale for 5 to 10 minutes or until tender.
    Stir it into the soup.
    Heat through and season with salt and pepper.
    Yield:
    4 to 6 servings.
