Pesto Dressing - cooking recipe

Ingredients
    3/4 c. part skim Ricotta cheese
    1/4 c. minced fresh basil
    1/4 c. minced fresh parsley
    1/4 c. skim milk
    2 Tbsp. grated Parmesan cheese
    1 medium shallot, quartered
    dash of white pepper
Preparation
    Combine all ingredients in container of electric blender.
    Top with cover. Process until smooth.
    Pour into bowl.
    Cover.
    Chill. Serve with spinach salad.
