Peanut Brittle - cooking recipe

Ingredients
    2 c. sugar
    1 1/2 c. pecan pieces
    1 c. light corn syrup
    3/4 c. water
    2 Tbsp. butter or margarine
    1 Tbsp. grated orange rind
    1 tsp. baking soda
    1 tsp. orange extract
Preparation
    Combine sugar, pecans, corn syrup and water in a large Dutch oven.
    Cook over low heat, stirring constantly, until sugar dissolves.
    Cover and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan.
    Uncover and cook, stirring occasionally, until mixture reaches hard crack stage (300\u00b0). Remove from heat.
    Stir in butter, orange rind, soda and extract.
