Chicken Taquitos - cooking recipe

Ingredients
    1 lb. boneless, skinless chicken breasts
    1 c. water
    1/2 c. minced green onions
    1 tsp. minced garlic
    3 to 4 c. vegetable or corn oil
    1 c. finely chopped tomatoes
    6 Tbsp. chicken broth
    2 tsp. flour
    1/2 tsp. each: cumin, chili powder and oregano
    1/2 tsp. salt
    1 doz. 6-inch corn tortillas
    shredded lettuce
    guacamole
    sour cream
Preparation
    Simmer chicken in water in 10-inch skillet, covered, 20 to
    25 minutes.
    Remove
    from
    water and cool.
    Shred chicken with fork. Saute onion and garlic in one tablespoon oil for 1 to
    2 minutes.
    Stir
    in chicken, tomatoes, chicken broth and spices. Simmer
    3
    to 5 minutes.
    In a heavy 10-inch skillet, heat about 1-inch
    of\toil.
    Dip
    tortillas in oil quickly to soften, drain on\tpaper
    towels (reserve oil).
    Spoon about 2 tablespoons of the
    chicken
    mixture
    down the center of each tortilla.
    Roll-up tortillas\ttightly.
    Secure
    with\twooden toothpicks.
    Fry rolled
    up\ttortillas
    at
    375\u00b0 until golden brown.
    Drain on paper towels.
