Lentil Soup - cooking recipe

Ingredients
    2 c. or 1 lb. lentils, soaked in cold water, washed and drained
    1 small onion, minced
    1 thin slice garlic
    1/2 c. margarine
    2 Tbsp. chopped parsley
    2 tsp. salt
    1/4 tsp. pepper
    3 qt. cold water
Preparation
    Saute margarine with onion, celery and garlic.
    Add parsley, salt and pepper.
    Add water and simmer for 2 hours.
    Add 1/2 pound ham shank, if desired.
