Fruited Sweet Potato Escallop - cooking recipe
Ingredients

3 c. sliced, raw sweet potatoes
4 Tbsp. flour
1/2 tsp. salt
1/4 tsp. white pepper
2/3 c. crushed pineapple
1 Tbsp. lemon juice
1/3 tsp. grated orange rind
1/4 tsp. cinnamon
3 Tbsp. margarine
1 1/2 c. boiling water
Preparation
-
Mix potatoes with flour and seasonings.
Add rest of ingredients and pour into buttered casserole.
Cover and bake 50 minutes.
Uncover during last 10 minutes of cooking to allow the top to brown.
Serve in dish used in baking.
