Diabetic Applesauce Cake - cooking recipe
Ingredients

1 1/2 c. raisins
2 c. water
1/2 c. oil
5 tsp. artificial sweetener
1 egg (unbeaten)
1 small can unsweetened applesauce
1 1/2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. salt
1 c. coarsely chopped nuts
Preparation

Preheat oven to 350\u00b0.
Put raisins in saucepan; cover with water.
Simmer 20 minutes uncovered.
Drain but save 3/4 cup of broth.
Let cool.
Mix applesauce, flour, baking soda, salt and spices.
Blend oil, artificial sweetener and egg until light and fluffy, then add above dry ingredients alternately with reserved raisin liquid.
Mix in raisins and nuts.
Pour in greased and floured mold pan.
Bake 25 minutes.
Freezes well.
