Watercress-Orange Salad - cooking recipe

Ingredients
    2 bunches watercress
    3 heads Belgian endive
    2 oranges
    2 shallots, finely chopped
    1/3 c. olive oil
    2 Tbsp. lemon juice
    salt and pepper to taste
Preparation
    Wash, trim and cut watercress into small pieces; place in large bowl.
    Cut endive in 1/4-inch pieces.
    Peel and section oranges.
    Add endive and orange sections to the watercress. Combine remaining ingredients in jar; blend well.
    Pour over salad; toss gently.
