Smoked Bluefish - cooking recipe
Ingredients

2 qt. water
1 c. non-iodized salt
1/2 c. brown sugar
1/2 c. lemon juice
1/4 Tbsp. garlic powder
1 tsp. onion powder
Preparation

Combine brine ingredients. Soak fillets overnight in a glass or ceramic dish in brine.
After soaking in brine, wash fillets thoroughly and pat dry before smoking.
