Moussaka(Eggplant Casserole) - cooking recipe

Ingredients
    1 to 1 1/4 lb. eggplant
    flour
    6 Tbsp. oil
    1/2 c. onions, chopped
    1 lb. ground beef
    1/4 c. parsley
    1/2 tsp. paprika
    1 to 2 (8 oz.) cans tomato sauce
    1/2 c. water or white wine
    1 medium tomato, sliced
    2 eggs, beaten
    1/2 c. plain yogurt
    2 Tbsp. grated cheese
Preparation
    Slice eggplant 1/4 inch thick.
    Lightly coat with flour and brown in large skillet with 6 tablespoons oil.
    Drain eggplant. Saute chopped onions until tender, then add meat.
    Saute 5 minutes or until done.
    Blend in parsley, paprika and salt and pepper to taste.
    Add tomato saue and water.
    Simmer 5 minutes.
