Morning Glory Muffins - cooking recipe
Ingredients

1/2 c. raisins
2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated, peeled carrots
1 large green apple, grated
1/2 c. sliced almonds
1/2 c. sweetened shredded coconut
3 eggs
2/3 c. vegetable oil
2 tsp. vanilla
Preparation

Soak raisins in hot water for 30 minutes.
Drain thoroughly. Preheat oven to 350\u00b0.
Generously grease 15 (1/2-cup) muffin pans. Mix flour, sugar, baking soda, cinnamon and salt in a bowl.
Stir in raisins, carrots, apple, almonds and coconut.
Beat eggs with oil and vanilla.
Stir into flour mixture until just combined. Divide batter among muffin cups.
Bake until golden brown and tester inserted comes out clean, about 20 to 22 minutes.
Cool 5 minutes, then remove from pan.
