Zucchini And Tomato Bake - cooking recipe
Ingredients

1/2 c. chopped green pepper
1/4 c. chopped onion
2 Tbsp. butter
2 c. zucchini slices (1/2-inch thick)
1/2 c. fresh bread crumbs
1/4 c. grated Parmesan cheese
1 tsp. salt
dash of pepper
3 tomatoes, cut in wedges
1/2 c. shredded Cheddar cheese
Preparation

Saute green pepper and onion in butter for 5 minutes.
Add the zucchini, crumbs, Parmesan cheese and seasonings.
Mix lightly; spoon vegetable mixture into a buttered 1-quart casserole.
Cover; bake in a preheated 375\u00b0 oven for 20 minutes.
Add tomatoes; bake 10 minutes longer.
Top with Cheddar cheese before serving.
Makes 6 servings.
