Potato Pancakes - cooking recipe

Ingredients
    2 c. raw potato
    2 Tbsp. flour
    1 tsp. salt
    small onion, grated
    2 well beaten eggs
    dash of pepper
Preparation
    Pour off water from grated potatoes.
    Add remaining ingredients; beat well.
    With a spoon, drop mixture onto hot griddle; spread as thin as possible.
    Turn over to fry on other side.
    Serve hot with either sour cream or applesauce.
