Sausage Bites - cooking recipe

Ingredients
    1 1/2 lb. smoked sausage, cut into 1/2 inch slices
    1 Tbsp. butter or margarine
    2 Tbsp. cornstarch
    1 (20 oz.) can pineapple chunks, drained (reserve juice)
    1/2 c. Coco Lopez cream of coconut
    2 Tbsp. prepared mustard
    1/4 tsp. garlic powder
    1 large bell pepper, cut in 1 inch strips
    1 (8 oz.) can water chestnuts, drained and halved
Preparation
    In large skillet, brown sausage in butter; drain and set aside. In small bowl, stir together cornstarch, pineapple juice, cream of coconut, mustard and garlic powder. Add to sausage in skillet. Cook and stir until sauce thickens. Add pineapple, pepper and water chestnuts; heat through and serve. Refrigerate leftovers. Makes 40 appetizers.
