Potato Mounds - cooking recipe

Ingredients
    2 1/2 c. water
    3 Tbsp. margarine
    3/4 tsp. salt
    3/4 c. milk
    3 1/4 c. mashed potato flakes
    2 beaten eggs
    1/4 c. melted margarine
Preparation
    Bring the water, 3 tablespoons margarine, salt and milk to a boil.
    Remove from heat and add the potato flakes.
    Cool the mixture a little and add the 2 well-beaten eggs.
    Mix well.
    Use an ice cream scoop and place mounds on a jelly roll sheet. Drizzle the melted 1/4 cup of margarine over the mounds and broil 3 inches from heat for 4 to 5 minutes.
    Makes about 10 servings.
