Southwest White Chili - cooking recipe
Ingredients

1 Tbsp. olive oil
1 1/2 lb. chicken, cubed
1/2 c. onions, chopped
1 c. chicken broth
1 small can chopped green chiles
1 (15 oz.) can diced tomatoes
2 green onions, sliced
1 can (regular size) cannellini beans (undrained)
1 tsp. garlic powder
1/8 tsp. ground red pepper
1 tsp. ground cumin
1/2 tsp. oregano
1/2 tsp. dried cilantro
Monterey Jack cheese, shredded
Preparation

Mix spices together. Heat oil in large saucepan over medium-high heat. Add chicken and onions. Cook 4 to 5 minutes. Stir in broth, green chiles and spice blend. Simmer for 10 minutes. Serve topped with sliced green onions and cheese.
