Miniature Cheesecakes - cooking recipe

Ingredients
    6 Tbsp. butter
    1 1/2 lb. graham cracker crumbs
    1/2 lb. dry cottage cheese
    8 oz. cream cheese
    1 c. sour cream
    3/4 c. sugar
    3 eggs
    1 tsp. vanilla
    1 can cherry or blueberry pie filling
Preparation
    Preheat oven to 350\u00b0.
    Melt butter in saucepan.
    Add graham cracker crumbs, tossing to coat well with butter.
    Set aside. Place cottage cheese, sour cream and cream cheese together in mixing bowl.
    Blend with electric mixer.
    Add sugar, then eggs and vanilla.
    Blend with electric mixer or food processor and blend 1 minute.
    Line mini muffin pans with paper liners.
    Place 1 teaspoon of graham cracker crumbs in each liner.
    Press down firmly.
    Fill liners 3/4 full with cheese mixture.
    Bake exactly 12 minutes.
    Let cool, then top each with 1 teaspoon pie filling. Chill until topping sets.
    Makes 4 dozen.
