Red Beans And Rice - cooking recipe
Ingredients

1/2 lb. red kidney beans
1/2 lb. chopped, smoked ham chunks
1/2 chopped yellow onion
3 ribs, chopped celery
1/2 green bell pepper, chopped
1 Tbsp. chopped parsley
2 bay leaves
crushed garlic clove
1/2 lb. Polish sausage, cut in 1-inch pieces (optional)
1 Tbsp. Worcestershire sauce
1 tsp. Tabasco (you can cut this down so it won't be too hot)
Preparation

Soak the 1/2 pound of kidney beans overnight in cold water. Drain.
Add 1/2 pound chopped, smoked ham chunks, celery, onions, green pepper, parsley, bay leaves and garlic.
Cover beans with water.
Simmer 2 hours with lid off.
Then add 1/2 stick margarine. Add black pepper to taste, 1 tablespoon Worcestershire and 1 teaspoon Tabasco and cook for an additional hour.
Remove bay leaves and serve over rice.
