Zucchini Relish - cooking recipe

Ingredients
    6 large zucchini
    1 green pepper
    1 red pepper
    4 large onions
    1/2 c. salt
    ice water to cover
    3 c. sugar
    2 1/2 c. vinegar
    1 c. water
    2 tsp. turmeric
    2 tsp. celery seed
Preparation
    Grind or grate squash, pepper and onions.
    Mix with salt and ice water to cover vegetables.
    Let stand 1 hour; drain.
    Rinse well and drain thoroughly.
    In saucepan, put sugar, vinegar, water, turmeric and celery seed.
    Add vegetables and simmer over low heat 10 to 15 minutes.
    Spoon piping hot into jars and seal. Process 5 minutes in boiling water bath.
    This relish is sweet and good eating with meat.
    Makes 10 pints.
