Individual Fruit Cakes - cooking recipe
Ingredients

2 sticks margarine (1/2 lb.)
1 1/2 c. sugar
7 eggs
2 1/2 c. flour (all-purpose plain)
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon (optional)
1 tsp. almond (optional)
1 c. sherry
1 lb. candied chopped pineapple
1 lb. chopped cherries
1/2 lb. dates
2 c. chopped nuts
Preparation

Cream butter and sugar together.
Add eggs (one at a time) and beat well.
Sift flour, salt and baking powder.
Add flour mixture and sherry alternately (very small amounts of sherry at a time).
Save 3/4 cup of flour to coat fruit and nuts.
Add fruit and nuts last.
Bake in small muffin tins, greased and floured or use paper cups.
Fill tins or cups 3/4 full and bake in a 275\u00b0 oven for 30 to 45 minutes.
Drop a few drops of sherry on each cake while hot.
Makes 6 dozen.
