Carrot Cake With Cream Cheese Frosting - cooking recipe

2 c. all-purpose flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
3 c. finely shredded carrots
1 c. cooking oil
4 eggs
coconut (optional)
nuts (optional)
Preparation

Grease and lightly flour a 13 x 9 x 2-inch baking pan or two 9-inch pans.
In large mixer bowl, stir together the flour, sugar, baking powder, baking soda, salt and cinnamon.
Add carrots, oil and eggs; mix until moistened.
Beat at medium speed of electric mixer for 2 minutes.
Pour into prepared pans.
Bake in a 325\u00b0 oven for 50 to 60 minutes, or until wooden pick inserted in center comes out clean.
Cool thoroughly on wire rack.
