Chickpea Stew - cooking recipe

Ingredients
    1 large onion, chopped
    1 large carrot, diced 1/2-inch
    1 Tbsp. vegetable oil
    2 large potatoes, peeled and diced
    1 (14 oz.) can whole tomatoes
    1 tsp. dried basil
    fresh ground black pepper
    2 c. cooked chickpeas
Preparation
    Place onion and carrot in medium pan with oil.
    Saute over low heat for 5 to 10 minutes.
    Add potatoes, tomatoes (with the juice), basil and pepper; stir to blend.
    Cover and simmer gently for about 30 minutes, or until potatoes are soft.
    Stir occasionally to make sure potatoes do not stick to pan.
    Add the chickpeas; warm through gently.
