Meat-Mushroom Sauce - cooking recipe

Ingredients
    1 lb. pork sausage meat
    2 lb. ground beef
    4 large onions, chopped
    4 to 6 large cloves garlic, mashed
    1 c. chopped parsley
    3/4 c. fresh mushrooms, thinly sliced
    3 (15 oz.) cans tomato sauce
    1 fifth dry red table wine
    1 tsp. each: ground sage and crumbled dry rosemary
    1/2 tsp. each: marjoram, thyme and black pepper
Preparation
    In a large kettle or Dutch oven, slowly brown sausage and beef.
    Add onions and saute until limp.
    Drain.
    Add garlic, parsley and mushrooms and stir.
    Stir in remaining ingredients. Cover loosely and simmer, stirring occasionally, for 3 hours or until reduced to thick sauce consistency.
    Skim off any excess fat.
    Makes about 3 quarts of sauce.
