India Relish - cooking recipe

Ingredients
    12 c. peeled and chopped tomatoes
    3 c. chopped celery
    2 c. chopped onions
    1/4 c. salt
    4 c. vinegar
    3 c. brown sugar
    1/3 c. mustard seed
    2 chopped red peppers
    1 tsp. cinnamon
    1/2 tsp. ground allspice
    1/2 tsp. ground cloves
Preparation
    Combine tomatoes, celery, onions and salt; let stand 2 hours. Add vinegar, brown sugar, mustard seed, red peppers, cinnamon, allspice and cloves to tomato mixture.
    Cook until mixture is thickened.
    Carefully fill hot jars, one at a time, leaving 1/4-inch head space.
    Wipe jar rim clean, place lid on, and screw band down evenly and firmly.
    Place jars in canner; process pint and 1/2-pint jars 15 minutes in boiling water.
