Lemon Bread Pudding - cooking recipe

Ingredients
    2 large lemons, juice and rind
    1 c. white bread cubes
    2 c. milk
    1/2 c. sugar
    3 tsp. butter
    4 eggs, separated
    1/2 tsp. salt
    confectioners sugar to taste
Preparation
    Preheat oven to 350\u00b0.
    Grease 1 1/2-quart baking dish.
    Grate lemon rind over bread cubes in large mixing bowl.
    Bring milk and sugar to a boil; add butter and pour over bread cubes; cool.
    Add beaten egg yolks and lemon juice to the bread mixture.
    Beat egg whites and salt until whites form stiff peaks, then fold into bread mixture.
    Egg whites may be omitted if so desired.
    Pour into prepared dish and sprinkle with confectioners sugar.
    Place baking dish in a pan of hot water and bake at 350\u00b0
    for 1 hour.
