After-The-Holidays Salad(Servings: 4) - cooking recipe

Ingredients
    2 c. diced cooked turkey
    1 c. pineapple chunks, well drained
    1 c. diced celery
    1/2 c. sliced green onions
    1/4 c. dry roasted peanuts
    1 c. seedless green grapes
    2/3 c. mayonnaise
    2 Tbsp. chopped chutney
    1 Tbsp. lime juice
    1/2 tsp. curry powder
    1/4 tsp. salt
    lettuce leaves (optional)
Preparation
    In a mixing bowl, toss first six ingredients.
    In a small bowl, combine all remaining ingredients except lettuce.
    Pour over turkey and mix gently.
    Chill.
    Serve on a bed of lettuce, if desired.
    Yields 4 servings.
    The fruit, nuts and seasonings give the salad a unique flavor.
