Zucchini Parmigiana - cooking recipe

Ingredients
    2 1/2 c. tomatoes
    3 Tbsp. tomato paste
    1/4 c. olive oil
    2 medium zucchini, sliced 1/2-inch thick
    2 c. bread crumbs, seasoned with 1 Tbsp. basil, salt and pepper
    2 Tbsp. parsley
    1/3 c. grated Parmesan cheese
    1 large clove garlic, chopped
    8 oz. Mozzarella cheese, sliced
Preparation
    Simmer tomatoes, tomato paste and olive oil for 25 minutes. Saute zucchini in oil until soft.
    Combine seasoned bread crumbs, parsley, Parmesan cheese and garlic.
    In a greased 1 1/2-quart baking dish, layer half the zucchini, bread mixture, tomato sauce and Mozzarella cheese.
    Repeat.
    Bake 15 minutes at 350\u00b0.
