Chilled Lemon Souffle - cooking recipe

Ingredients
    3 egg yolks, beaten
    1 c. sugar
    1/3 c. lemon juice
    1 envelope unflavored gelatin
    1/4 c. cold water
    4 egg whites
    2 c. heavy cream
Preparation
    Mix yolks with sugar and lemon juice.
    Stir gelatin and water together.
    Place gelatin mixture in small pan of hot water, allowing to melt.
    Cool slightly and mix with egg yolks.
    In a large bowl, beat egg whites until stiff.
    In another large bowl, beat cream until stiff.
    Fold all ingredients together gently. Pour into souffle dish or crystal bowl.
    Cover with plastic wrap and chill for 2 hours.
