Jamaican Easter Bun - cooking recipe
Ingredients

2 c. brown sugar
1 c. milk
3 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
2 eggs
1/2 tsp. ginger
1/2 tsp. allspice
1/2 tsp. nutmeg
1/4 c. raisins
1/4 c. mixed candied fruits
1 Tbsp. oil
Preparation

Sift together dry ingredients, except sugar.
Beat eggs; mix with milk, sugar and oil.
Mix into dry ingredients, add fruits. Bake in greased loaf tin at 350\u00b0 for 30 minutes, then reduce temperature to 300\u00b0 and continue baking for 1/2 hour or more, until a knife inserted comes out clean.
Wrap with plastic wrap while still warm to retain moisture.
This will keep several weeks in refrigerator.
It is better if it sets a day or two before serving.
It also freezes very well.
