Mexican Meat Pie - cooking recipe

Ingredients
    1 lb. hamburger
    1/2 c. chopped onion
    1 small can mushrooms
    1 (10 oz.) can enchilada sauce
    1/4 c. snipped parsley
    2 tsp. cornstarch
    1 pkg. ready made pie crust
    3 eggs, beaten
    1 1/2 c. shredded marble cheese
Preparation
    In skillet, brown ground beef and onion; drain.
    Sprinkle with cornstarch; blend in enchilada sauce, parsley and drained mushrooms.
    Set aside.
    Put bottom crust in deep dish 9-inch pie plate.
    Spread half of eggs in crust.
    Spoon in meat mixture; top with cheese, then spread the rest of the eggs over cheese.
    Put on top crust; seal and flute edge.
    Cut slits in top for steam escape. Bake at 350\u00b0 for 50 to 55 minutes.
    Let stand 15 minutes before cutting.
    Makes 8 servings.
