Potato Leek Soup(Vichyssoise) - cooking recipe

Ingredients
    3 T butter
    5 c peeled and diced potatoes
    1 c heavy cream
    1 c sliced leeks (or substitute onions)
    4 c chicken broth
    salt and pepper to taste
    garnish with minced chives
Preparation
    In a large soup pot, melt butter and saute leeks until limp 3-5 minutes.
    Add potatoes and chicken broth.
    Simmer until the potatoes are tender.
    Cool slightly.
    Puree in a blender or food processor until mixture is smooth.
    Return to pot add heavy cream. Season to taste.
    Chill the soup well or may be served hot.
