Crab Scampi - cooking recipe

Ingredients
    1 lb. imitation crab meat
    2 Tbsp. margarine
    1 clove garlic, minced
    1/4 tsp. crushed red pepper
    1/4 tsp. salt
    1 tomato, diced
    1 tsp. chopped parsley
Preparation
    Rinse crab meat in cold water; pat dry with paper towels.
    In a 10-inch skillet over medium heat in hot margarine, cook garlic and crushed red pepper 2 minutes, stirring occasionally.
    Increase heat to high; add crab and salt.
    Cook to warm crab meat; add tomatoes.
    Heat through.
    To serve, spoon onto warm platter. Sprinkle with parsley.
    Makes 4 servings, about 140 calories per serving.
