Janet'S Calico Relish - cooking recipe

Ingredients
    4 large green peppers
    4 large red peppers
    4 large onions
    10 medium carrots, peeled
    1 1/2 c. sugar
    2 Tbsp. salt
    1 1/2 c. vinegar
Preparation
    Cut green and red peppers into quarters; remove seeds.
    Peel and quarter onions; grind carrots, green and red peppers and onions through food chopper (coarse).
    Place in kettle.
    Cover with boiling water.
    Stir in sugar, salt and vinegar.
    Bring to boiling point.
    Reduce heat and simmer, stirring occasionally for 5 minutes.
    Ladle into hot sterilized jars and seal.
    Yield: about 8 to 8 1/2 pint jars.
