Zucchini Relish - cooking recipe

Ingredients
    20 c. unpeeled, diced zucchini
    8 c. diced onion
    10 Tbsp. salt
    4 Tbsp. cornstarch
    4 tsp. celery seed
    2 sweet, red pepper
    2 sweet, green pepper
    5 c. cider vinegar
    2 Tbsp. turmeric
    2 tsp. black pepper
Preparation
    Mix together zucchini, onion, and salt. Let stand overnight. Rinse well and drain.
    Mix all other ingredients with zucchini mixture in a pot. Bring to a slow boil. Reduce heat and simmer for 30 minutes.
    Pour into glass jars and seal (do not process).
